Preheat the oven to 200C/400F/gas mark 6.

Place a 250g round of brie in an ovenproof dish. Slice the top, drizzle with olive oil and cover with 2 sprigs of thyme.

Cover with foil and bake for 10-15 minutes, or until the cheese feels soft…
